Too Many Tomatoes Coming Out Your Ears?

If you’ve been growing tomatoes this summer, you’ll know the drill. One minute you’re waiting for them to ripen, the next you’ve got bowls of them on every windowsill and absolutely no idea what to do with them all.

Sound familiar? Good — because this week’s recipe is built for exactly that problem.

Ratatouille is one of those dishes that was practically invented for gardeners. It uses up a mountain of tomatoes, it’s dead simple to make, and it tastes brilliant. Even better, if you’re growing courgettes, peppers, or aubergines alongside your tomatoes, you can throw those in too.

Ratatouille With Brie

Ready in: 45 minutes  |  Serves: 4  |  Vegetarian

This isn’t your fancy French restaurant version — it’s a proper allotment cook-up. Chunky veg, good olive oil, and a bit of melted brie on top because why not.

What You’ll Need

  • 3 medium courgettes, sliced into thick rounds
  • 1 large aubergine, cubed
  • 2 red peppers, roughly chopped
  • 4 ripe tomatoes, quartered
  • 1 onion, sliced
  • 3 cloves of garlic, crushed
  • A good glug of olive oil
  • 1 tsp dried herbs de Provence (or mixed herbs)
  • Salt and pepper
  • 150g brie, sliced
  • Fresh basil if you’ve got it growing

Method

  1. Heat the oven to 200°C (fan 180°C / gas 6).
  2. Toss the veg — courgettes, aubergine, peppers, tomatoes, and onion — in a large roasting tin with the olive oil, garlic, and herbs. Season well with salt and pepper.
  3. Roast for 30 minutes, giving it a stir halfway through. You want everything softened and starting to caramelise at the edges.
  4. Lay the brie slices over the top and pop it back in the oven for another 10 minutes until the cheese is melting and golden.
  5. Tear over some fresh basil if you’ve got it, and serve straight from the tin with some crusty bread.

Pick your tomatoes when they’re fully coloured but still firm — that’s when they’ve got the best flavour.
